Grill Americano

Following the successful delivery of the construction of Society and Yakimono restaurants, at 80 Collins St for Lucas Restaurants, we were engaged on a lump sum to build the prestigious Grill Americano at 101 Collins Street.

Combining Venetian elegance and New York energy, Grill Americano is a new hospitality venue located at 112 Flinders Lane, at the base of the 101 Collins tower. The restaurant fitout occupies the former dry cleaner and printing shop and has transformed the existing site into a premium dining offering for the tenants of 101 Collins as well as a destination venue for CBD diners.

Built by us and designed by Mitchell & Eades, the brief was to create something unexpected with the interiors, in a reimagined manner that created an inviting environment for guests. The concept embraces an Italian brutalism aesthetic, with a venetian softness and elegance.

At the heart of the front-of-house, the on-show kitchen features a hand-built, traditional wood fired oven imported from Naples Italy, that is wrapped in hand-crafted Biano Miele marble, a 19m-long marble bar with custom, electroplated and hand polished table lamps.

Natural light is provided to the dining room and bar by full-height external steel-frame windows. Three large custom glass and steel framed chandeliers provide the 3.8m-high ceiling dining room with ambient light. A beautiful artisan, polished plaster-finish has been applied to the dining walls. A custom Josper grill alongside the oven provides a smokey, flamed grilled cooking element for all types of meat. Four tap beer fountains mounted on the back bar. Terrazzo tiles grace the floor, with feature walls of six times-coated high-gloss American oak timber cladding towering the venue.

Dining tables are made up from American oak timber laid with 90-degree turntable grain with feature bronze electroplated bases and inlay.

Using 360-degree video and regular communication with stakeholders, the project was a great success for all. We have delivered a number of projects at 101 Collins St and have developed a great rapport with 101 building management team. This contributed to the success of the Grill Americano project delivery.
